In the 2025 edition of Osterie d’Italia by Slow Food, presented on October 14 in Milan, the Osteria once again confirmed its most important recognition: the “Chiocciola” (Snail), a symbol of excellence and authenticity awarded to those osterie that embody the values of good, clean, and fair food. This year’s guide features over 1,900 restaurants, including 324 “Chiocciole,” 10 of which are in Umbria.
"The Chiocciola - explain host Paolo Morbidoni and chef Giacarlo Polito - is much more than an award: it represents loyalty to a philosophy that places the territory, sustainability, and the promotion of local traditions at the center. Receiving it once again is a great honor for us and a confirmation that our daily work, dedicated to the quality and authenticity of our dishes, continues to be appreciated.
This important achievement belongs not only to us, but to the whole of Umbria. It is the result of a shared commitment with local producers, with whom we collaborate every day to bring to the table ingredients that tell the story of our land. This recognition inspires us to go further: to innovate while respecting tradition, to explore new recipes, and to continue telling the story of Umbria through every dish.
