At the Osteria, we believe every ingredient should have a story, an identity, and a deep connection to the land. From today, this philosophy extends to bread as well. Thanks to an important agreement with the “Molini Popolari Riuniti of Ellera and Umbertide”, we are proud to present two new types of bread made with sourdough and grains from a 100% Umbrian supply chain: the "Fonte Fibra" bread and the white bread certified as “Zero Residue”.
The certification Zero Residue guarantees that the grains used are grown without leaving detectable chemical residues, respecting the environment, health, and flavor. This bread not only nourishes but also embodies the values of a land that honors its rhythms and traditions.
Here, bread ceases to be a mere side dish and becomes a protagonist. With our new 2 types of bread, we celebrate the short supply chain and the attention to detail that makes every product we serve unique. Bread is no longer anonymous because now, like everything else on our table, it has a story to tell: that of an authentic, sustainable Umbria that is deeply tied to its territory.
We often organize Tipico Nights to gather together and introduce you to our producers and their stories. Told by them, the ingredients of our cuisine are not just typical, but unique, and they allow us to tell the story of Umbria in every bite, making it authentic and unforgettable.
