For over ten years, we have been striving to enhance the ritual of conscious eating, stimulating both belly and brain. We put in passion and research, allying ourselves with those who cultivate and transform (respecting) the fruits of the earth: the new farmers and artisans who have recovered, by renewing them, centuries-old traditions. We are convinced that this food is not only good, clean, and fair, but also extraordinarily contemporary.

Paolo Morbidoni

Paolo Morbidoni is a wine and oil sommelier who has dedicated his career to enhancing the gastronomic excellences of Umbria. As the proprietor, along with Chef Giancarlo Polito, he has conceived the Osteria as a place of continuous storytelling, through food, wine, oils, and the inspirations that the territory evokes.
From the poems on the walls to the inscriptions on the bottles, every detail in the Osteria tells the story of a journey that is undertaken not just out of necessity, but for pleasure.
He is not just a communicator explaining the techniques or sensory characteristics of a wine or oil, but a narrator who conveys the soul of the territory through food. Thus, every tasting becomes an experience that engages all the senses, leading guests to discover the essence of Umbria and the uniqueness of its products.

Giancarlo Polito

Chef and owner Giancarlo Polito is a master of the kitchen who has skillfully reinterpreted Umbrian culinary tradition, maintaining a deep respect for its roots.
Thanks to his vast experience and natural creativity, he expertly blends traditional dishes with modern influences, offering a gastronomic journey that impresses with its elegance and authentic flavors, which enhance the raw materials, respecting seasonality.
His vision extends beyond traditional cuisine: at our other gourmet restaurant “La Locanda del Capitano,” the Chef enhances creativity, offering a completely different, yet somehow complementary, proposal to that of the Osteria.
“The ability to innovate without ever betraying the roots” somewhat expresses his work philosophy, and is reflected in every dish: a perfect balance between tradition, respect for raw materials, careful use of cooking techniques, and a contemporary approach.
