Paolo Morbidoni is a wine and oil sommelier who has dedicated his career to enhancing the gastronomic excellences of Umbria. As the proprietor, along with Chef Giancarlo Polito, he has conceived the Osteria as a place of continuous storytelling, through food, wine, oils, and the inspirations that the territory evokes.
From the poems on the walls to the inscriptions on the bottles, every detail in the Osteria tells the story of a journey that is undertaken not just out of necessity, but for pleasure.
He is not just a communicator explaining the techniques or sensory characteristics of a wine or oil, but a narrator who conveys the soul of the territory through food. Thus, every tasting becomes an experience that engages all the senses, leading guests to discover the essence of Umbria and the uniqueness of its products.
